The Best Lactation Cookie Recipe Ever!

Serves: 20 Cookies
  • 1 cup wholemeal flour
  • ½ teaspoon baking powder
  • ½ cup butter
  • ½ cup virgin coconut oil
  • ¾ cup brown sugar
  • 2 tablespoons flaxseed meal
  • 2.5 tablespoons of water
  • 1 egg
  • ½ tablespoon vanilla extract
  • 1 tablespoon almond extract
  • 1 teaspoon cinnamon
  • 2 tablespoons of brewers yeast (I use nutritional yeast because I can't get brewers yeast on island. Do not use baker's yeast!)
  • ½ teaspoon salt
  • 1 & ½ cups oats
  1. Preheat oven to 350 degrees F (177 degrees C)
  2. In a small bowl combine flaxseed and water and set aside.
  3. In a large mixing bowl, cream the butter, coconut oil, and sugar, then add the egg, vanilla and almond extract. Mix well.
  4. Add in the moistened flaxseed and all dry ingredients except the oats.
  5. Finally, stir in the oats and any optional ingredients - see below.
  6. Use a teaspoon measurer to scoop the cookie dough and drop onto a lightly greased or lined baking tray.
  7. Bake for 8-10 minutes. Remove from oven and place on a cooling rack.
OPTIONAL: Add ½ cup of any of the following to enhance flavor: Chocolate Chips, Pecans or Walnuts, Dried Cranberries, Raisins
